Gwyneth Paltrow Unveils Goop Kitchen's First Dine-In Experience in San Diego

Gwyneth Paltrow is stepping off the delivery app and into the dining room with the launch of Goop Kitchen's first sit-down restaurant, set to open in Del Mar, California on August 31. This new venture marks a significant evolution for Goop Kitchen, which previously operated as a ghost kitchen since its inception in 2021.
The restaurant will feature a new menu distinct from its delivery offerings, including a burger that Paltrow notes is "not perfected for takeout yet." The design, spearheaded by architect Michael Hsu and his firm, places a strong emphasis on the aesthetic experience, with a standout feature being a meticulously designed window that separates the dining area from the kitchen. This fluted glass is intended to maintain a sense of mystery while showcasing the culinary action inside.
Paltrow aims to create an atmosphere that feels both timeless and traditional, steering clear of the typical wellness restaurant clichés. She envisions a space that resonates with the warmth and classic style of her brand, reflecting nearly 20 years of Goop's identity. To achieve this, Hsu's team focused on creating a unique voice for each Goop Kitchen location without adhering to a single design theme.
The Del Mar space is designed to be airy and inviting, capitalizing on its open-air, walkable setting. The interior features a sunlit dining area with fine-grain lime plaster walls and elegant marble accents, including a striking Breccia Capraia marble slab adorned with the Goop Kitchen logo. The patio seating, crafted with durable Perennials performance fabric, provides a garden terrace feel, aiming for comfort and a homely vibe.
Paltrow's meticulous attention to detail is evident in every aspect of the restaurant's design, from the custom Schumacher striped upholstery to the solid walnut tables and booth structures. She insists that even the smallest elements, like the toilet paper holder, are crucial to the overall experience. "Every single detail, as small as it is, is as important as the biggest one," she asserts.
The layout of the restaurant has also been thoughtfully crafted to enhance the dining experience. Hsu's design includes a central island of booths that offer a sense of privacy, encouraging guests to relax and enjoy their meal without the rush typically associated with fast-casual dining.
Paltrow's vision extends beyond mere aesthetics; she hopes to foster a culture of mindful eating. By encouraging diners to savor their meals in a comfortable setting, she aims to shift the way people approach dining. "In traditional Chinese medicine, they say you should never stand up and eat," she explains, highlighting her desire to create a space conducive to relaxation and enjoyment.
As Goop Kitchen prepares to open its doors in Del Mar, Paltrow looks ahead to a second location in Manhattan, where she plans to further refine her vision of a dining experience that combines culinary excellence with thoughtful design. The Del Mar restaurant serves as a test case for what she hopes will become a standard in Goop's future endeavors.
