The unique twist comes from the addition of puffed rice brittle, which infuses a toasted rice flavor into each bite. Collins notes, “I wanted to incorporate a toasted rice flavor into a cookie,” and with the help of chef Yasuaki, the cookies were aptly named 'Gohan,' meaning 'rice' in Japanese.
To create the puffed rice brittle, start by cooking sugar, butter, and water until it reaches a honey-like color. After adding puffed rice cereal and baking soda, it transforms into a textured delight that’s perfect for mixing into the cookie dough. The cookie base itself is a blend of granulated sugar, brown sugar, butter, eggs, and malted milk powder, ensuring a rich flavor that pairs beautifully with the white chocolate and brittle.
