An initial attempt to increase the cream cheese resulted in an overly tangy taste, prompting a creative solution from Hana Asbrink, the deputy food editor.
Asbrink suggested using gelatin to stabilize the filling, which proved to be the perfect fix. The recipe calls for a conservative amount, just one packet, to avoid any unwanted jiggle. By blooming the gelatin in cold water before mixing it with heated cream, bakers can achieve a luscious, sliceable filling that remains rich and creamy rather than firm.
The cheesecake requires at least four hours in the fridge to set, with overnight being ideal for the best texture. This method not only results in a visually appealing dessert but also leaves bakers with extra gelatin packets for future culinary experiments, such as tiramisu panna cotta or homemade marshmallows.
