The trend of adding jalapeño slices to Sauvignon Blanc has gained immense popularity, creating a two-ingredient cocktail dubbed "Spicy Sauvy B." Parker’s collaboration with Invivo co-founders Tim Lightbourne and winemaker Rob Cameron began in 2019, leading to the birth of the Invivo X, SJP brand, which now boasts four distinct wine expressions.

Invivo X, SJP Spicy Jalapeño White Wine is made from New Zealand's Invivo X, SJP Sauvignon Blanc, infused with natural jalapeño flavor. This combination is touted to deliver a refreshing taste, balanced with just the right amount of spice. To evaluate the new release, I conducted a taste test, leveraging my background as a Certified Sommelier.

The recommended serving method is ice cold, either straight from the refrigerator or poured over ice. I experimented with both to see how the flavors held up. Using a classic Bordeaux glass allowed me to fully appreciate the wine’s aromas, which included notes of freshly cut grass, melon, and citrus zest. On the palate, these flavors were complemented by a green bell pepper undertone and a sweetness that, while not my personal favorite, was necessary to balance the jalapeño's spiciness.

Interestingly, the heat from the jalapeño was subtle at first but intensified with each sip, particularly when tasted without ice. The wine's acidity was high, providing a zesty finish, while a creamy texture from the yeast fermentation process added weight without sacrificing freshness. While I might not be a die-hard fan of jalapeño wine, I found Invivo's offering to be pleasantly crisp and refreshing.

For those who enjoy spicy flavors, this wine is a fun option, reminiscent of a spicy margarita but with a wine base. It pairs well with tropical dishes, such as mahi mahi tacos or gochujang shrimp skewers. Priced around $18.99 for a 750-milliliter bottle, savvy shoppers can find it for as low as $13.99 at select retailers, while wine.com lists it at $15.97 plus shipping.
