The saffron crocus, with its striking lilac flowers and vibrant red stigmas, is a labor-intensive treasure of the culinary world. Each delicate thread is harvested by hand, a practice that has remained unchanged since ancient times.
Known for its potent flavor and dazzling color, saffron’s high price tag stems from the vast number of flowers needed to produce even a small amount—about half a kilogram requires tens of thousands of stigmas!
This spice, originally from Crete and Iran, has a rich history, spreading from Persia to India and eventually to Europe. By the 13th century, saffron cultivation flourished in regions like Italy, France, and England, particularly in Essex, where it was so prominent that the town of Chipping Walden earned the name Saffron Walden.
