Freezing leftover risotto may not be the best culinary choice, but if you find yourself in a pinch, there are ways to salvage it, according to culinary experts.

Theo Randall, a renowned chef at Theo Randall Cucina Italiana in London, warns against freezing risotto as it often leads to undesirable results. "Freezing risotto will be a bit of a disaster," he states, explaining that the rice absorbs too much moisture during defrosting, turning it into a starchy, unappetizing mass.

Food writer Sue Quinn adds that overcooking the risotto before freezing can exacerbate the problem. "Softer grains mean more leached starch," she explains, which leaves less room for reheating without compromising texture. She also emphasizes the need for quick reheating to avoid further softening the rice, suggesting that if one must freeze risotto, the best method is to reheat it in the microwave. By adding a splash of water or broth, covering it loosely, and heating in one-minute intervals while stirring, you can achieve a more palatable result. Alternatively, reheating on the stovetop with a splash of liquid while stirring gently can help maintain its quality.
