Mastering Pipis: A Guide to Cleaning and Cooking

To prepare pipis, first soak them in a bowl of very salty water (30g salt per litre) for 24 hours to help them expel grit. After soaking, drain and scrub the shells vigorously with a stiff brush to ensure they are clean.
When cooking, remember that oven temperatures are based on conventional settings; reduce the temperature by 20˚C for fan-forced models. All measurements use Australian standards.
