Yukiguma: A Fusion of French Winemaking and Japanese Sake Craftsmanship

At the intersection of French winemaking and Japanese brewing lies Yukiguma, an innovative sake that embodies a unique cultural blend. Crafted at the historic Daimon Brewery, nestled at the base of Mount Ikoma in Osaka, Yukiguma presents a contemporary vision of traditional sake-making.

Nathalie Perrodo, a winemaker with a rich background in Burgundy, has taken her passion for terroir and craftsmanship into the realm of sake. "I grew up with a deep respect for terroir, craftsmanship and the idea that what we drink can express both a place and a culture," Perrodo shares. Fascinated by the parallels between fine wine and sake, she embarked on this journey to merge her French-Asian heritage with Japanese traditions.

Under the guidance of master brewer Yasutaka Daimon, who oversees the small-batch production of just 5,000 bottles annually, Yukiguma is a labor of love. The brewery, established in 1826, prides itself on its focus on quality over quantity, using 100% Yamada Nishiki rice and pure spring water sourced from the Ikoma Mountains. This water, which makes up around 80% of the sake, is crucial to its balanced flavor profile.

Perrodo emphasizes that the sake should not be pigeonholed as simply sweet or dry; instead, it offers a versatile taste that complements the rich culinary traditions of the Kansai region. Describing its flavor notes, she mentions hints of persimmon, mangosteen, and lychee, crafting a sensory experience that invites exploration.

Yukiguma, which translates to 'snow bear,' is designed to be enjoyed neat, on ice, or in cocktails. It aims to create memorable moments, bridging two cultures through a shared appreciation for exceptional beverages.
